Banana Bread Muffins

Ingredients

1 Cup White Sugar
1/2 Cup Vegetable Oil
1/4 Cup Applesauce
1 Large Egg
1 Teaspoon Mexican Vanilla
3 Ripe Bananas
2 Cups All-Purpose Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Teaspoon Ground Cinnamon

Directions

Preheat oven to 350°F. Place 12 Muffin Cups in 3.5 inch muffin pan or grease and flour muffin pan.

In a large bowl, mix sugar, vegetable oil, applesauce, egg, and vanilla until creamy. Add in bananas and mix until bananas are evenly disributed.

Mix in flour, baking soda, salt, and cinnamon. Spoon muffin batter into muffin pans.

Bake 20 to 30 minutes. Muffins are usually done at approximately 25 minutes, however, ovens vary. Test by poking the center of the muffin with a toothpick. If the toothpick comes out clean, the muffins are done.

Alternatively, 2.5 inch muffin pans bake for 15 to 20 minutes.
