  1. In a crock pot on high, combine Beef Broth, Garlic, Tomato Paste, Cumin and Chili Powder.
  2. Using a tablespoon of butter to start, brown Beef in a large skillet over medium heat. This should be done in multiple small batches to prevent simmering.
  3. Place browned beef into crock pot.
  4. Soften onion and jalapeno, over medium low heat, in skillet with a teaspoon or two of water to deglaze the skillet.
  5. Add the onion and jalapeno to crock pot.
  6. Melt 4 tablespoons of butter and stir in 4 tablespoons of flour to form a roux. Add roux to crock pot and stir.
  7. Simmer on high for 4 to 5 hours or until beef is tender.
  8. Serve with tortillas, rice, or tortilla chips. Fresh tomato, lettuce, and shredded Colby Jack are excellent additions to this dish.
