Carne Guisada
Ingredients
- 2 lbs Chuck Roast (Cubed)
- 1 Bulb Garlic Minced
- 2 Cups Beef Broth
- 1 Large Onion (diced)
- 6-10 Jalapeno Peppers (diced) remove seeds and veins for less heat
- 3 Tablespoons Cumin
- 1 Tablespoon Chili Powder
- 2 Tablespoons Tomato Paste
- 5 Tablespoons Butter
- 4 Tablespoons All Purpose Flour
Directions
- In a crock pot on high, combine Beef Broth, Garlic, Tomato Paste, Cumin and Chili Powder.
- Using a tablespoon of butter to start, brown Beef in a large skillet over medium heat. This should be done in multiple small batches to prevent simmering.
- Place browned beef into crock pot.
- Soften onion and jalapeno, over medium low heat, in skillet with a teaspoon or two of water to deglaze the skillet.
- Add the onion and jalapeno to crock pot.
- Melt 4 tablespoons of butter and stir in 4 tablespoons of flour to form a roux. Add roux to crock pot and stir.
- Simmer on high for 4 to 5 hours or until beef is tender.
- Serve with tortillas, rice, or tortilla chips. Fresh tomato, lettuce, and shredded Colby Jack are excellent additions to this dish.
