Crock Pot Chicken Taquitos

Taquitos

2-3 Chicken Breasts
3 Tbsp Taco Seasoning
8 oz Cream Cheese
1/4 Cup Water

16 oz Shredded Colby Jack

16 Flour Tortillas
1/4 Cup Butter Melted

Salsa

2 Jalapenos (stems and seeds removed; use seeds for more heat)
4 Tomatoes
1/4 Small Onion
2 Cloves Garlic
1/2 tsp Salt
1 Tbsp Lime Juice
1 Tbsp White Vinegar

Crock Pot

Combine chicken, taco seasoning, cream cheese, and water.
Cook on high for 4 to 6 hours.
Preheat oven to 400°F.
Shred Chicken and stir in colby jack cheese.
Place Chicken into tortilla and roll.
Place on baking sheet with raised edges. (cheese will melt out)
Brush on melted butter.
Bake for 8 to 10 minutes or until edges begin to brown.

Food Processor

Combine tomatoes, onion, garlic, salt, lime juice, and vinegar.
Blend until there are no large pieces.
Alternatively, dice tomatoes and onion; mince garlic; combine in bowl with lime juice, vinegar, and salt.
